What you'll need:
- 2 cups flour
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 tablespoon sugar
- 2 eggs
- 1 3/4 cups buttermilk
- 6 tablespoons melted butter
Method:
Mix flour, baking soda, baking powder, and sugar together. Set Aside.
Separate egg yolks from whites. Beat egg yolks in another bowl until they are light yellow. Add buttermilk and butter to the egg yolks.
Gently stir the wet ingredients into the dry just until blended. Do not overmix.
Beat egg whites until stiff peeks appear.
Fold egg whites into batter.
